One of most incredible blessings in my life has been being a grandmother. And I’m a grandmother of six! My grandkids run the roost at our house, getting away with a lot more than their moms and dads would like, but I’ve always said, “that’s what being a grandparent is all about!”
I became The Gluten-Free Grandma quite by accident. I’ve always known that my body and wheat didn’t get along, so I just tried to eat less of it. Then, about a three years ago, my daughter converted to a gluten-free diet for my oldest granddaughter, and I thought, “how in the world will this work? Kids eat crackers! Kids eat bread! Kids eat cookies! Kids eat cake! What will she feed this child?
At first, we struggled… Wheat is in EVERYTHING.
Birthday parties where kids had cake or cupcakes were often the scene of screaming fits and very confused parents. Going out to dinner meant ordering bland food that the kids wouldn’t touch. Wheat is in EVERYTHING.
So I started to put my cooking skills to work. Researching different wheat-free flour options, figuring out what worked and what didn’t. We had some trial and error. But at the end of the day, with eliminating wheat, I’ve found my arthritis is much less painful, I personally have more energy, and my granddaughter can have crackers and bread and cake and cookies – that are gluten-free and DELICIOUS!
